With a culinary package from Soul Food Mexico, guests are introduced to what we consider Mexican Soul Food - comida tlaxcalteca


Through hands-on cooking classes with expert Tlaxcaltecan chefs, tours of local markets, and additional excursions, our guests will learn what makes Tlaxcala – and its food – so special. As our guest, you will immediately find yourself immersed in Mexico’s rich cultural history – your home during your stay will be the beautiful Hacienda Santa Barbara. Your cooking classes will take place in the hacienda’s kitchen using ingredients grown within the property or sourced from our friends and partners.


Each of our chefs will present a different side of comida tlaxcalteca and each class will culminate in dinner – you can experience the results of your work immediately, ask questions, and share feedback. You will return home from your trip with a book full of not only recipes, but also notes on the history of the dish, the ingredients, substitutions you can make at home, and Tips and Tricks direct from our chefs.


Soul Food Mexico’s full culinary package is based on a weeklong stay, with a Monday arrival and Sunday departure. We can also offer guests a weekend package or work together to build a customized package based on your interests and the number of people in your party.

WHAT’S INCLUDED: Culinary Package     


Below you will find a sample schedule for our weeklong culinary package. Included in the price of our weeklong package are transportation to and from the airport (Mexico City or Puebla), all meals (including a welcome alcoholic beverage upon arrival at the hacienda and one alcoholic beverage per meal at restaurants), four 2 hour long cooking classes, and all additional excursions included in the weeklong itinerary. Also included, of course, is your hospitality within the hacienda for the week - every room is equipped with two queen sized beds, table, chairs, shower with hot water, and either a wood-burning stove or a gas heater for cold nights. 



Soul Food Mexico Culinary Package (Monday – Sunday)


Monday: Arrival.


   6 pm: Room assignments, introductions. Welcome cocktail/drink. Tour the hacienda.

   7:15 pm: Sunset from the church roof, light snack.

   8 pm: Dinner.

   9:30 pm: Bedtime/Free time.


Tuesday: Walking tour of the area.


                9 am: Breakfast

                10:30 am: Hour Walking Tour of Hacienda (photo opportunity)

   11:30 am: Walking Tour of Hacienda de la Concepcion, visit a local artisan 

                1 pm: Light lunch with Sandra

                2 pm – 3 pm: Walk back to the hacienda by way of the old well

                3 pm – 5 pm: Rest Hour in the hacienda

                5 pm – 7 pm: Cooking Class with Maria

                7 pm: Dinner

                8:30 pm: Campfire


Wednesday: Huamantla and Tianguis.


                8 am: Breakfast.

                9 am: Departure for Tianguis.

                10 am – 11:30 am: Brief Walk through downtown Huamantla, visit to shops & local artisan 

                12:00 pm – 1:30: Tianguis. Get to know the market, enjoy typical Mexican snacks [Lunch]

                1:30- pm: Departure for the Hacienda

                2:30- 4 pm: Rest Hour

                4 – 6 pm: Cooking Class with Elena

                6 pm: Dinner

                8:30 pm: Bedtime/Free time      


Thursday: Pulque and La Malinche.


                8:00 am: Breakfast

                9:30 am: Departure to San Jose Teacalco for a pulque tour with Pulque Master Don Abraham

                10:00 am – 12:00 pm: Pulque Tour

                1 pm: Garden visit + Lunch in the Welcome Center of La Malinche

                3 pm: Departure for the hacienda

                4 pm – 5 pm: Rest Hour in the hacienda

                5 pm – 7 pm: Cooking Class with Galo

                7 pm: Dinner

                8:30 pm: Optional Game Night


Friday: Hacienda Soltepec.


                8 am: Breakfast

                9:30 am: Departure to Hacienda Soltepec

                10:00 am – 1:00 pm: Tour of Hacienda 

                1:00 pm: Lunch at Soltepec

                2:30 pm: Return to the hacienda

                4 pm – 5 pm: Rest Hour in the hacienda 

                5 pm – 7 pm: Cooking Class with Maria

                7 pm: Dinner

                8:30 pm: Lighting of the barbacoa


Saturday: Temazcal and Barbacoa.


                9 am: Light Breakfast

                10:00 am: Temazcal

                12:00 pm: Lunch of Barbacoa

                2 pm – 7 pm: Relaxation Time in the Hacienda/Optional afternoon out

                7 pm: Dinner

                9 pm: Parting Campfire


Sunday: Departure.


                9 am: Breakfast

                11 am – 1 pm: Free time in the hacienda.

                1 pm: Departure





All guests have the option to request additional services to supplement their program with us. Guests may request additional classes or workshops with a chef, yoga classes, hikes or guided walks, or any of our destinations offered on our Culture page.
